In a Dutch oven or large, heavy pot, combine the chicken stock, carrots, celery, potatoes, and onion. Bring mixture to a boil, cover and simmer until the vegetables are tender, about 10–12 minutes. Add the chopped broccoli. Cover and simmer for another 10 minutes.
Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook, stirring constantly, until lightly browned, 1–2 minutes. Gradually whisk in the milk and cook until the mixture is bubbling and slightly thickened, 5–7 minutes. Add the cheese one handful at a time and whisk until melted and fully incorporated into the mixture. Stir in the salt, pepper, and mustard. Slowly stir the cheese mixture into the vegetables until well combined. Stir in the bacon and adjust seasonings, if necessary. Makes 6 servings.
